Juliana Wolkowski has spent close to two decades working in some of Toronto's most beloved bar and restaurants - from neighbourhood rooms and high-volume spaces to fine dining and internationally recognized cocktail programs. Behind the bar, on the floor and all of the spaces in between.​

She started Lowboy Studios because she believed a beverage program should be just as considered as everything else in the room. That drinks should have a point of view without being alienating. That the best bar experiences aren't just happy accidents, but are the result of someone caring deeply of what it feels like to sit down and be seen.​

The work spans new openings and established programs alike in need of a fresh set of eyes. What stays the same is the approach - thoughtful, creative, honest, and grounded in the realities of running a room night after night.
