
Juliana Wolkowski has spent close to two decades working in some of Toronto's most beloved bars and restaurants, from neighbourhood rooms and high-volume spaces to fine dining and internationally recognized cocktail programs. Her experience spans the room from almost every angle: behind the bar, on the floor, in management, as well as leading beverage programs. Alongside years of service, she has pursued formal beverage education through the WSET Level 3 Award in Spirits and Advanced Sherry Certification, grounding her work in both technical discipline and practical experience.
She started Lowboy Studios because she believes a beverage program should be just as considered as everything else in the room. That drinks should have a point of view without being alienating. That the best bar experiences aren't happy accidents, but the result of someone caring deeply about what it feels like to sit down and be seen.
Over the years, that perspective has grown beyond service into consulting, education, and judging - always with the same belief that good hospitality is built through thoughtful decisions, many of them so small a guest may never consciously notice them. Whether opening a new restaurant or looking at an established program see itself a little more clearly, the goal isn't to impose a signature style. It's to uncover what makes a place worth returning to.
The work changes from project to project. What stays the same is the approach: thoughtful, creative, honest, and grounded in the realities of running a room night after night.
